Cream of Mushroom soup recipe

Ingredients for cream mushroom soup

  • 100 g butter
  • 20 g flour
  • 4 cups of cream
  • 400 g roughly chopped mushrooms
  • 400 g finely chopped mushrooms
  • 1 medium finely chopped onion
  • 4 cups chicken broth
  • salt
  • pepper
  • chopped or dried parsley and basil

Preparation and cooking of cream mushroom soup

  1. Melt butter in soup pot on medium low heat, and append onions and salt. Then, saute the onions until they are soft.
  2. Add mushrooms and cook for around 5 minutes, and stir it well as you do to prevent any lumps.
  3. Add the broth a bit at time while keep on stirring. You can append the rest of the broth after enough broth has been added to make everything liquid.
  4. Bring to a boil and reduce to low heating and simmer for about 5 minutes or so. It allows the flour to thicken the soup.

Finishing the cream of mushroom soup

Append the cream, pepper, basil and parsley, and simmer the soup without boiling for around 10 minutes to let the flavors mix completely.
